Grouse Saltimbocca

Recreate Oliver's restaurant dish from scratch or, for a limited time only, order his ready-to-fry Grouse Saltimbocca from The Store. Oliver has carefully prepared these delicious parcels from scratch this week. Perfect as a starter or lunch alongside a great seasonal salad. 

GROUSE SALTIMBOCCA INGREDIENTS:

2 Grouse breasts

2 sage leaves

2 thin slices of lemon

4-6 bacon rashers

Salt and freshly ground black pepper

40g unsalted butter

A handful of mixed salad leaves

20ml red wine

1 teaspoon balsamic vinegar

METHOD:

Place Grouse breasts on a chopping board and lay a sage leaf and a slice of lemon on top of each.

Wrap the rashers of bacon around each breast to form a parcel; season all over with salt and pepper. 

Heat a heavy-based frying pan over moderate heat, melt the butter and fry the breasts for 2–3 minutes on each side. 

Meanwhile, scatter some colourful salad leaves over a large platter ready for serving. 

Transfer the breasts to a carving board, slice each one into three, and arrange on the bed of salad leaves.

Return the frying pan to high heat and add the red wine and balsamic vinegar. Let it sizzle for a moment, then pour over the Grouse and serve.
