Brussels Sprout Salad

Forget over-boiled and mushy Brussels Sprouts of your nightmares and bring freshness to your festive feasting with this delicious salad recipe. A classic and all Gladwin Brothers restaurants, this Brussels sprout, cheddar and walnut salad is a real winner and loved by many guests.

BRUSSELS SPROUT AND APPLE SALAD WITH MATURE CHEDDAR AND WALNUTS 

Serves 6)

 Ingredients 

 150g walnuts 

50ml rapeseed oil 

1tbs honey 

Salt 

Pepper 

400g young Brussels sprouts 

2 eating apples 

Juice of 2 lemons 

150g mature cheddar 

Method 

Preheat oven to 150c.  Mix together the walnuts, oil and honey, season well with salt and pepper and put the mixture in a small roasting tin and cook for 10mins until nuts are nicely toasted.  

 Meanwhile, shred the sprouts very finely. Core the apples, keeping the skins on and cut them into fine matchsticks. Combine the sprouts and apples in a mixing bowl, add the lemon juice and toss together.  

To serve, spoon the sprout and apple mixture onto individual serving plates, sprinkle with the grated cheese, scatter over the toasted walnuts and drizzle the honey flavoured oil over the top.  

Serve alongside your Christmas lunch and enjoy!
